Diseño e implementación de ensayos de laboratorio conducentes a: / Design and implementation of laboratory tests leading to:- Obtener bebidas no alcohólicas a partir del tratamiento de mostos por UHPH y verificar su estabilidad físico-química y microbiológica a largo plazo. / – To obtain non-alcoholic beverages from the treatment of musts by UHPH and to verify their long-term physicochemical and microbiological stability.- Obtener nutrientes para microorganismos a partir del tratamiento de biomasas de levadura con UHPH. / – Obtaining nutrients for microorganisms from the treatment of yeast biomasses with UHPH.- Disminuir la población microbiana nativa del mosto mediante su tratamiento por UHPH para facilitar la implementación de biotecnologías fermentativas con levaduras no-Saccharomyces y bacterias lácticas. / – Decrease the native microbial population of the must by UHPH treatment to facilitate the implementation of fermentative biotechnologies with non-Saccharomyces yeasts and lactic acid bacteria.- Mejorar la estabilidad proteica de los vinos tras el tratamiento del mosto por UHPH. / – Improving the protein stability of wines after must treatment by UHPH.- Disminuir el empleo de SO2 en la vinificación a partir de mostos tratados por UHPH. / – To reduce the use of SO2 in winemaking from musts treated by UHPH.- Acelerar la crianza sobre lías tratadas por UHPH y mejorar la calidad del vino envejecido. / – Accelerate aging on UHPH-treated lees and improve the quality of the aged wine.Realizar el tratamiento estadístico de los resultados obtenidos. / Perform statistical analysis of the results obtained.Redacción de publicaciones de carácter científico-técnico. / Writing of scientific and technical publications.Participación y asistencia a congresos para labores de difusión y divulgación. / Participation and attendance to congresses for dissemination and divulgation tasks.

Skills/Qualifications

– Conocimientos avanzados de enología. / – Advanced knowledge of enology.
– Conocimientos avanzados de microbiología enológica y técnicas de análisis microbiológico. / – Advanced knowledge of oenological microbiology and microbiological analysis techniques.
– Manejo de grandes equipos instrumentales como cromatógrafos de líquidos y gases, espectrofotómetros, espectroscopía de masas, microscopios ópticos y de fuerza atómica, entre otros. / – Handling of large instrumental equipment such as liquid and gas chromatographs, spectrophotometers, mass spectroscopy, optical and atomic force microscopes, among others.
– Experiencia en el uso de homogenización a ultra alta presión (UHPH) y de otras tecnologías emergentes no-térmicas de aplicación en enología como luz pulsada (PL) y altas presiones hidrostáticas (HHP). / – Experience in the use of ultra-high pressure homogenization (UHPH) and other emerging non-thermal technologies for oenology applications such as pulsed light (PL) and high hydrostatic pressure (HHP).
– Conocimientos informáticos básicos y manejo de software específico para el tratamiento estadístico de datos (Ej. SPS, statgraphics…). / – Basic computer skills and use of specific software for statistical data processing (e.g. SPS, statgraphics…).
– Habilidades de comunicación, liderazgo y trabajo en equipo. / – Communication, leadership and teamwork skills.

Specific Requirements

– Licenciado en Ciencias Químicas / – Bachelor of Science in Chemistry
– Máster en Ingeniería Alimentaria / – Master in Food Engineering
– Doctor en química o tecnología de alimentos / – Ph.D. in chemistry or food technology
– Mínimo tres años de experiencia postdoctoral en investigación enológica / – Minimum three years of postdoctoral experience in oenological research.
– Experiencia en la tecnología de homogenización a ultra alta presión (UHPH) / – Expertise in ultra high pressure homogenization (UHPH) technology.
– Niveles de español e inglés altos / – High level of Spanish and English.
